Prepare and cook a wide variety of authentic Tandoor items such as naan, roti, kebabs, tikkas, and grilled dishes.
Ensure all dishes are cooked according to standard recipes and presentation guidelines.
Monitor the Tandoor temperature and cooking time to ensure optimal taste and texture.
Marinate meats and vegetables in advance with attention to flavor, tenderness, and authenticity.
Collaborate with the Indian kitchen team to prepare mise-en-place and support overall kitchen operations.
Maintain proper portion control and minimize waste through effective stock rotation (FIFO).
Ensure cleanliness and hygiene of the Tandoor area in compliance with HACCP and food safety standards.
Assist in ordering and inventory of tandoori ingredients and supplies.
Train and guide junior staff or commis in tandoori cooking techniques when required.
Communicate any maintenance or safety issues related to equipment immediately to the Sous Chef.
Innovate and contribute new dishes or improvements to the tandoor menu when required.
Minimum 3-5 years of experience in a similar Tandoor Chef/CDP role, preferably in a hotel or upscale Indian restaurant.
In-depth knowledge of Indian spices, marinades, and regional tandoori cooking styles.
Ability to work under pressure and manage time effectively in a fast-paced kitchen.
Strong knowledge of food hygiene and kitchen safety standards.
Physically fit to work in hot environments and handle the demands of a tandoor station.
Team player with good communication skills and a positive attitude.
Culinary diploma or professional kitchen training is an added advantage.
